Wow, so hard to believe that it is the last week of 2018. This year has seriously flown by and it has been a great year… my husband and I both started new jobs, we traveled A LOT (Ireland being our easy favorite), we adopted a puppy named Avery, and we loved watching our FIRST baby nephew grow and learn.

Alright enough about me! Let’s talk food.

Looking for something to do with all that leftover beef tenderloin or roast beef from the holidays?? Look no further…. These Beef Crostini with Caramelized Onions and Horseradish Aioli are super tasty and oh-so-easy to put together. I don’t know about you, but I am really embracing the post-holiday laziness. I cheated a bit and decided to buy my horseradish aioli versus making it myself. Traders Joe’s has a delicious horseradish aioli but if you don’t have a Trader Joe’s near by, I’ve seen a version at Kroger by Stonewall Kitchen. Either will work!

Beef Crostini with Caramelized Onions and Horseradish Aioli

Do you have leftover beef tenderloin or roast beef from the holidays? Don't let those leftovers go to waste! Try these Beef Crostini's featuring Swiss, Caramelized Onions, and a Horseradish Aioli.

Ingredients

  • 1 french baguette 12 + inches long
  • 2 yellow onions thinly sliced
  • 8 oz sliced swiss cheese
  • 1 lb Roast beef or Beef tenderloin thinly sliced
  • 4 oz horseradish aioli*
  • 4 tbp olive oil (split)
  • salt and pepper to taste
  • basil - for garnish (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a sauté pan over medium-low heat. Add the sliced onions and cook low and slow for 30-40 minutes until the onions have a nice caramelized color. Stir the onions every 5 minutes but refrain from touching them too often. Turn your stove down if the onions begin to get crispy or too dark.
  2. While the onions are caramelizing, you can begin preparing your crostini. Preheat your oven to 400 F. Slice the baguette into twenty-four 1/2 inch wide slices.  Lay the slices flat on oiled cookie sheet. Brush the top of each crostini with olive oil and sprinkle with salt and pepper. Bake for 5 minutes.
  3. Remove the crostini's from the oven. Slice the Swiss cheese into pieces that just cover each crostini. Top each crostini with the sliced Swiss cheese & sliced beef. Put the crostini's back in the oven for another 5 minutes or until the cheese has melted.
  4. Top each crostini with a pinch of caramelized onions. Drizzle with the horseradish aioli. Sprinkle with julienned basil. Serve immediately

Recipe Notes

*I found Horseradish Aioli at Trader Joe's but it may be seasonal. Stonewall Kitchen makes a horseradish aioli too. If you can't find a pre-made horseradish aioli, feel free to make your own.
