Peach and Honey Whipped Ricotta Crostini

I’m over here dancing for joy because it’s finally one of my favorite times of the year… PEACH SEASON! It’s been too long… and, yes, I know you can buy peaches all year long at the grocery store, but any peach snob (like me) knows that it just isn’t the same as a fresh, juicy summertime peach.

Naturally, I decided to harness all this excitement and energy into making a delicious recipe to feature this glorious fruit. The Peach and Honey Whipped Ricotta Crostini is a show stopper. SO pretty. SO easy. SO festive. You just gotta whip these up ASAP! If you’re feeling frisky, you could even grill the peach slices… SAY WHAH!?! Yeah, can you imagine? Pretty bomb. So get to it!

Per usual, I made this recipe using my trusted and loved Cuisinart Food Processor. This is probably my favorite kitchen gadget! If you’re thinking about investing in a food processor, definitely check this one out!

Peach and Honey Whipped Ricotta Crostini

Only 6 ingredients and you can easily impress your friends with these delicious Peach and Honey Whipped Ricotta Crostinis! Recipe by Scrambled and Spiced

Ingredients

  • 1 Baguette
  • 1 1/2 cups Whole Milk Ricotta
  • 1/4 cup Honey
  • 1/8 teaspoon Salt (and more for seasoning)
  • Balsamic Reduction (store bought)
  • 1 ounce Fresh Basil for Garnish

Instructions

  1. Preheat oven to 350 F

  2. Cut your baguette into 1/4 inch slices. Lay bread slices flat on a baking sheet and spray (or brush) with oil. Season the slices with just a bit of salt. Toast in the pre-heated oven for 8 minutes
  3. Combine the Ricotta, Honey, and Salt in a food processor (with a blade attachment) or high power blender. Pulse until just combined. You don’t want to over mix the ricotta or it will become runny and fall through any air holes in your crostini
  4. Once your crostini has cooled, top them with a dollop of the ricotta mixture, a peach slice, and a basil leaf. Place crostini on a tray and drizzle with balsamic reduction
