A simple salsa that can be made in your food processor! Perfect for the peak of summer and all those fresh tomatoes!
Start by prepping your tomatoes. Wash your tomatoes and cut out the core. Slice your tomatoes into quarters and remove the liquid flesh around the seeds. By removing this excess liquid, it will create a thicker salsa;
Add about 1/3 of your tomatoes to your food processor with a blade attachment. Add the garlic. Blend until you can no longer see big chunks of garlic;
Add the remaining ingredients to the food processor. Pulse until just chopped. Be careful to not over chop or it will become very thin (still good, but wrong consistency);
Taste and add additional salt and pepper if necessary. Serve with Tortilla Chips!
*On a spice scale, my salsa turned out about a Medium, however, every jalapeño pepper is different so I advise trying it before adding the entire pepper. If you are sensitive to spice, either omit the jalapeño all together or use crushed red pepper and season to taste.
