One of my go-to healthy recipes! Vietnamese-inspired Shrimp Summer Rolls are packed with nutritious veggies, fresh herbs, and pared with a delicious peanut sauce!

Ingredients
1.5lbslarge cooked shrimp, peeled and devined size 21/25
rice paper
3cupsshredded carrots
3cupsshredded cabbage
2ripe avocadossliced
1ozfresh cilantro
1ozfresh basil
1ozfresh mint
Peanut Dipping Sauce
1/2cuppeanut butter
1tspfresh ginger
1garlic clove
2tbspsirachamore or less to taste
6tbspwateror more to thin to desired consistency
4tbspsoy sauce
2tbspwhite sugar
Instructions

Add all ingredients to a blender. Blend for 20-30 seconds until smooth.
Shrimp Summer Rolls
Fill a large plate with water. You will use this to rehydrate the rice papers.
Set the rice paper in the water for roughly 10 seconds until slightly pliable and sticky. Set the wet rice paper on a clean, dry plate.
Begin filling the rice paper by placing about 1/4 cup carrots, 1/4 cup cabbage, 2 slices of avocado, 3 shrimp, and a few basil, cilantro, and mint leaves in the center of the rice paper.
Immediately wrap the rice paper around the filling similar to a burrito.
