Chewy Ginger Cookies

We are fully immersed in the holiday season over here at the Arthur house! Tree is up, stockings are hung, and the holiday shopping has commenced. And today, I made one of my favorite holiday recipes for the first time of the season. I’ve been making these Chewy Ginger Cookies for the past few years and they never seem to disappoint. Not only are they absolutely delicious, but they are extremely easy to make with a simple ingredient list.

Chewy Ginger Cookies

Beware: These Chewy Ginger Cookies are dangerous! Once you start, you can't stop.

Cook Time 10 minutes
Total Time 30 minutes

Ingredients

  • 1.5 cups butter softened to room temperature
  • 2 cups sugar (plus a little extra for rolling)
  • 1/2 cup molasses
  • 2 eggs
  • 4 cups flour
  • 4 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 tsp. ginger
  • 1 tsp. cloves
  • 1 tsp. salt

Instructions

  1. In a medium bowl, combine the flour, baking soda, cinnamon, ginger, cloves, salt. Whisk to combine. 

  2. Using an electric stand or hand mixer, beat together the butter and sugar on medium speed for 2 minutes until light and fluffy. Add in the eggs, one at a time then slowly add in the molasses. 

  3. Gradually add the dry ingredients and mix until just combined. 

  4. Cover the bowl with plastic wrap and refrigerate the dough for 30min-1hr. 

  5. After dough is chilled, preheat the oven to 375 degrees F.  

  6. While the oven is preheating, prepare a baking sheet by covering the base with a piece of parchment paper. 

  7. Roll the bough into small balls, about 1 inch diameter. Roll each ball in sugar until they are completely coated. 

  8. Place on the prepared cookie sheet, at least 2 inches apart. 

  9. Bake for 8-10 minutes until the cookies begin to slightly crack on the top. They will continue to crack while cooling. 

  10. Remove from the oven and let cool for a few minutes before moving the to a wire rack to cool.
