This Healthy Shrimp Summer Roll Recipe is bursting with flavor thanks to fresh herbs and this super simple peanut sauce that you can throw together in just a few minutes. Per usual, I used a few of my favorite kitchen gadgets… My NutriBullet Blender and my Cuisinart Food Processor . I love my NutriBullet Blender for making simple sauces and dressings because it is very fast to set-up and simple to clean. My Cusinart Food Processor is fabulous for chopping and shredding veggies, like the cabbage and carrots used in this Healthy Shrimp Summer Roll Recipe.

Using Rice Paper Wraps

For this recipe,  you will use Rice Paper to wrap your meat and veggies. I was able to find rice paper at our local grocery store but if they aren’t available you can also find them here . If you’ve never used rice paper rolls in the past, I think you will really enjoy experimenting with this fun and low-cal wrap option. Don’t be intimidated! They’re super easy to use once you get the hang of it. Rice paper is sold in solid, dried sheets.  You will need to rehydrate them before using them. I suggest filling a shallow plate or bowl with about 1 centimeter of water. One at a time, you will soak the rice paper in the water for roughly 10 seconds. The rice paper will begin to feel pliable and slightly sticky. Lay on a flat surface and as you add your fillings, the rice paper will continue to soften. Once filled with your favorites, you will simply wrap like a burrito. You may have a few rips or tears in the wrappers at first try, but trust me, they will still taste delicious!

Let’s Talk Fillings

One of the many reasons that I love summer rolls is because you can fill them with all your favorites! My personal favorite veggie combo is carrots, cabbage, and avocado, however, feel free to experiment! Maybe some mango? shredded beets? water chestnuts? I say heck yes, go crazy!

As for protein, I suggest shrimp, shredded chicken, or tofu. Whatever floats your boat.

On the other hand, please don’t skimp on the herbs. It may seem excessive to have cilantro, mint, AND basil, but trust me on this one, it is so tasty and I think you will be seriously missing out without this yummy green trio.

Healthy Shrimp Summer Rolls with Peanut Sauce

One of my go-to healthy recipes! Vietnamese-inspired Shrimp Summer Rolls are packed with nutritious veggies, fresh herbs, and pared with a delicious peanut sauce!
Course Dinner
Prep Time 20 minutes
Servings 12 rolls (about 4 servings)

Ingredients

  • 1.5 lbs large cooked shrimp, peeled and devined size 21/25
  • rice paper
  • 3 cups shredded carrots
  • 3 cups shredded cabbage
  • 2 ripe avocados sliced
  • 1 oz fresh cilantro
  • 1 oz fresh basil
  • 1 oz fresh mint

Peanut Dipping Sauce

  • 1/2 cup peanut butter
  • 1 tsp fresh ginger
  • 1 garlic clove
  • 2 tbsp siracha more or less to taste
  • 6 tbsp water or more to thin to desired consistency
  • 4 tbsp soy sauce
  • 2 tbsp white sugar

Instructions

  1. Peanut Dipping Sauce
  2. Add all ingredients to a blender. Blend for 20-30 seconds until smooth.

Shrimp Summer Rolls

  1. Fill a large plate with water. You will use this to rehydrate the rice papers.
  2. Set the rice paper in the water for roughly 10 seconds until slightly pliable and sticky. Set the wet rice paper on a clean, dry plate.
  3. Begin filling the rice paper by placing about 1/4 cup carrots, 1/4 cup cabbage, 2 slices of avocado, 3 shrimp, and a few basil, cilantro, and mint leaves in the center of the rice paper.
  4. Immediately wrap the rice paper around the filling similar to a burrito.
  5. Serve immediately with the peanut dipping sauce.
